Plum Pudding Cookies

A nice cookie for those who enjoy the flavours of a plum pudding. I like the peel that is in the mixed fruit, however, sultanas and currants could be substituted.


Plum Pudding Cookies

125g butter
3 tablespoons treacle
2 tablespoons water
1/2 teaspoon bicarb soda
1 cup raw sugar
1 egg

1 cup plain flour
1 cup SR flour
2 cups mixed fruit
1 teaspoon mixed spice


Method
Put butter, water and treacle in a large saucepan and put on low heat to melt.

Add sugar, and bicarb soda and mix well

Stir in eggs, mixed fruit, spice and both flours and mix well. The mixture will be a little sticky. Allow the mixture to firm for ten minutes or so.

Roll heaped teaspoons of mixture into balls and place each ball  onto a greased tray or use baking paper. Flatten slightly by pressing with your fingers. Allow a little room to spread.

Bake 170 deg C for approx 15 minutes or until golden brown.


Allow to cool a few minutes on the tray and then transfer to a cooling rack.
