Cherry, Fig and Rose Bubble Slice

This is another of those quickly made, no bake slices. Gluten free, providing you use gluten free rice puffs. It seems that rose flavour is something you either like or not, if making this slice for an unknown audience use less rosewater in the topping or omit it alltogether. I have a few friends who adore the rose flavour so if I make it for them I add a little more than is in the slice and at least four teaspoons in the topping.

Cherry, Fig and Rose Bubble Slice

60 g butter
1 large block dark chocolate eg Club (180-220g)
1/2 cup glace cherries
4 - 6 glace figs
2 teaspoons rosewater
2 teaspoons vanilla extract
2 cups rice bubbles/puffs

1 large block dark chocolate eg Club (180-220g)
60 grams butter
2 - 4 teaspoons rosewater

To decorate
chopped cherries and fig

Line a slice tin with baking paper.

Cut up glace cherries and figs into small pieces. Reserve approximately one third of the fruit to decorate the slice.

Break chocolate into small pieces put into a large glass or microwave suitable bowl. Add butter and microwave on medium in I minute intervals until butter and chocolate have melted.

Stir in glace fruits, rosewater and vanilla, add rice bubbles and mix well.

Press into the slice tin and smooth.

Pour chocolate topping over the slice and refrigerate for a few hours to allow to fully set.

Chocolate Topping
