A Mr Bertucci Big and it is, really big. This is the biggest one so far, although, there have been many that are nearly as big. The seeds from this one have been saved for next year. Our wonderful planting of Mr Bertucci tomato plants has produced many kilograms of delicious tomatoes. Some have been eaten as salad but most have become stewed tomatoes and ultimately pasta sauce. I make this type of pasta sauce a lot in Summer, the ingredients may vary slightly, however, the fresh stewed tomato sauce is the constant.
It is a simple matter to stew up the tomatoes, diced and cook over low heat with a little oil or butter until the tomatoes collapse and some of the liquid evaporates. I never peel or remove the seeds.
Saute some bacon, onion and garlic, add some grated zucchini and maybe a few cherry tomatoes or some mushrooms
Add the stewed tomato some freshly ground black pepper and perhaps some chopped fresh red chilli and cook until heated through
Toss in the cooked pasta, some chopped fresh herbs such as parsley and basil or oregano.
Serve with lots of freshly grated parmesan
