Veganuary, a charity / movement that promotes the take up of a vegan diet and lifestyle throughout January and of course, the rest of the year. I am not a vegan or even a vegetarian but was challenged to become so one meal at a time. January has been and gone and there have been quite a few slip ups along the way. So what have I struggled with? Eggs and cheese, two of my favourite things to eat and dining out, particularly at friend’s homes. The easiest swap was almond milk for regular milk, it has become my preferred especially on my porridge. Here is some of what we ate, often multiple times as it was easier to make larger amounts and reheat in the microwave.
Sopa Seca, adapted from a recipe Smith and Daughters
Cashew cream and avocado dip with pumpkin sourdough crisps
Chickpea Dumplings in creamy coconut curry and spinach sauce
Potato gnocchi with tomato and vegetable sauce
Stuffed peppers, vegan style
Oats, with Almond Milk, almond cream, fresh figs and pomegranate
Spicy Mexican bean wraps
Mexican spiced stuffed peppers with chilli beans and avocado and cashew cream
Red rice in coconut milk with caramelised pineapple, toasted almonds and mint
Chia puddings made with almond milk, Almond yoghurt, rhubarb compote, strawberries and pistachios
And because it is the season, lots of tomato and onion sandwiches
