Easy Cheesy Potato Bake



We have been very lucky with our potato harvest. Successive plantings have resulted in a lengthy harvest period and a plentiful crop - perfect for making this Easy Cheesy Potato bake. 


Possibly my favourite way to have potatoes. Quicker to cook than the the more traditional scalloped potatoes. Really so simple and it is more about organisation. The thickness of the potato slices, the power of the microwave and the amount of potatoes will all influence how long this takes. If you are making lots of potatoes it is best to microwave in two batches.

Steps to Make Easy Cheesy Potato Bake

Put the oven on 200 to get hot

Wash, thinly peel and slice potatoes into 1 cm slices. 

Place sliced potatoes in a microwave proof bowl or a dish that they can also be baked in. Add a little water and cover. Microwave on high until potatoes are just tender. 

Remove potato slices from the bowl and place in a ceramic/pyrex baking dish or leave in the dish that was used to microwave the potatoes.

Pour over 1 cup cream and 1 cup of tasty cheese. Bake until cheese is melted and golden brown.

As they grow up we build up the soil to increase the harvest.

and when they start to die down like this one we harvest.
