Walnut Cream Sponge

Walnut cream sponge with maple syrup, not too sweet, not too filling and just the thing after a big day.


I like a good balance of cream to cake. This is a single layer split in half. The cream is whipped, no sugar and a splash of vanilla. The cream has chopped walnuts mixed through it and is then used as a filling and topping for the sponge, more chopped walnuts sprinkled on top. Pour the maple syrup over each wedge as it was served. 

Make or buy a sponge, make and fill with the walnut cream filling, cover and refrigerate overnight. Freeze the second sponge for another time.
