Honey Cake

Recently, I was given some jars of beautiful honey from two friends bees and although reluctant to use it in cooking made some up into this delicious and simple cake.


This cake is a bit like this ginger cake although if you omit the spices the honey flavour is even more pronounced.

Mostly I make it in a loaf tin and serve it buttered but decided to try it in these small bundt tins purchased from Aldi some time ago.









These tins have the bundt insert and can also be used a small springform tins. Very pleased with the tins! My experience of the Aldi supermarket chain is that products often return, it is definitely worth keeping an eye out for them.



Honey Cake
1/2 cup sherry or water
1/2 cup brown sugar
1/2 cup of honey
1 egg
1/2 cup grapeseed or other bland oil
1 1/2 cups SR Flour
1/2 teaspoon bicarbonate of soda

Optional
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon of nutmeg



Method
Warm sherry and sugar together, stirring to dissolve, add honey and allow to cool.
Add remaining ingredients and mix well.
Pour/spoon into prepared tin. Bake 170 deg C until dark golden brown and tests clean with a skewer, approximately 40 minutes depending on the size of the cake tin.

To Serve
Dust with a little sifted icing sugar,drizzle with a little thin lemon icing or slightly warmed honey thinned with some water.

Note
The cake tends to rise a lot so do not over fill the tin.
