Happy New Year

New Year's Eve parties have become sedate affairs, drinks in moderation, delicious food and some good fun card games while we waited for the clock to tick over.


Every year Jo brings this dip and each year it is the cause of my undoing. Luckily, it is the night before resolutions are made. This is how she makes it.

Cream Cheese Dip with Capsicum Topping

3 tins diced capsicum
¾ cup sugar
¾ cup white vinegar
1 teaspoon of crushed/minced garlic
500g spreadable cream cheese, or cream cheese softened and beaten

Put capsicums and juice into a saucepan, add vinegar, sugar and garlic
Simmer until thick and syrupy, approximately and hour or so. Heat needs to be low.

Allow to cool and then pour over cream cheese.


Breakfast this morning as I have most mornings, freshly squeezed orange and grapefruit juice followed by a bowl of my special mix.

1 heaped spoon of oat bran, psyllium husk and chia seeds, topped with a generous spoon of thick/Greek yoghurt, some crumbled walnuts, a splash of vanilla extract, a teaspoon of cinnamon and skim milk on top.

Coffee out.
