Weetbix Bickies

I like to have a jar of biscuits on hand. Not a fancy biscuit but perfect for casual morning teas, supper or even a special lunchbox treat. They have a mild caramel flavour and a chewy texture from the the crushed Weetbix.





Weetbix Bickies

125 g butter
1/2 cup caster sugar
1/2 cup brown sugar
2 tablespoons water
1/2 teaspoon bicarbonate of soda
1 1/4 cups whole meal SR flour
1 cup oat bran
5 Weetbix, crushed
1 egg

 

Method

Put butter and sugars in a saucepan, cook on low heat until melted and sugars are dissolving. Increase heat slightly and cook for a few more minutes until the mixture develops a caramel colour. Remove from heat and allow to cool slightly.

Add water and bicarb soda and mix well.

Add oat bran, flour and weetbix and egg. Stir thoroughly. The mixture will be a sticky.

Drop heaped teaspoons of the mixture and onto greased trays or use baking paper. Allow room to spread.

Bake 150 deg C for approx 15 minutes or until golden brown. 

Cool for a few minutes on trays and then transfer biscuits to a cooling rack.



The mixture is quite sticky and is easiest dropped onto the trays using two teaspoons



The biscuits spread into a rounded shape.



Cool thoroughly before storing in an airtight container.
