Sniffle Season Treats - Lemon & Honey Oat Crisps

Everyone knows that when you get a cold you need rest and lots of fluids. Folk remedies suggest that lemon and honey are what you take when you have a cold.  If you are feeling a little sniffly perhaps you could make yourself a cup of this tea and rest or maybe do a little 'comfort baking'. These biscuits might be just what you or an ailing friend need - lots of lemon, honey and oats. Note that for the real devotees of lemon, whisky and honey as a panacea for a cold a little whisky could be substituted for some of the lemon juice.


Lemon & Honey Oat Crisps

125 g butter
3 tablespoons honey
2 lemons (zest and 4 tablespoons of juice)
½ teaspoon bicarb soda
3/4 cup raw sugar
1 cup flour
1 2/3 cup rolled oats

Method
Zest the lemons and then juice them. (4 tablespoons of juice is required, add a little water to make up the 4 tablespoons if necessary)

Put butter and honey into a large saucepan and put on low heat to melt.

Add bicarb soda, the mixture should start to foam

Add sugar, oats, flour, lemon juice and zest Mix well

Place heaped teaspoons of mixture onto greased tray or use baking paper. Allow room to spread.

Bake 160 deg C for approx 15 -20 minutes or until golden brown. If you like the biscuits to be chewy rather than hard remove a little sooner.
