Bounty Slice.

Bounty chocolate bars are something that I like and many times have thought how nice it would be to have a slice that was like a Bounty bar.


I have been playing around with this recipe idea for some time and have finally found a combination that provides a chocolatey biscuit base with a moist coconut filling. For the topping 200g of dark chocolate could be used, my preference is for a combination of dark and milk chocolate as this is more like the coating on the Bounty Bar.

 It has the bonus of being a no bake slice, however, it uses a lot of chocolate and butter and is therefor a little more expensive to make. It is quite rich so is best cut into smaller squares or fingers.

This is the coconut milk powder that I used. It is available in most large supermarkets. An alternative would be to boil/reduce 1 cup of canned coconut milk down to make 1/2 a cup.












Bounty Slice
Base
150 g butter
100 g dark chocolate
1 pkt Marie biscuits finely crushed(250g)

Chocolate Topping
100 g butter
100 g dark chocolate
100 g milk chocolate

Coconut Filling
200 g white chocolate
1 sachet Coconut milk powder
1/2 cup water
1 teaspoons vanilla extract
1 1/2 cups dessicated coconut

Method
Base
Melt butter and chocolate together (use microwave on medium setting 1 minute intervals)
Add crushed biscuits and mix well. Press into a lined slice tin and press down firmly. Place in fridge.

Coconut Filling
Dissolve coconut milk powder in the water.
Melt white chocolate and coconut milk together (use microwave on medium setting 1 minute intervals)
Add dessicated coconut and vanilla. Mix well
Spread over prepared base using a wet knife/spatula . Place in fridge.

Chocolate Topping
Melt butter and chocolate together (use microwave on medium setting 1 minute intervals)
Pour over the slice. Refrigerate until set.
