Cherry and Vanilla Biscuits

Sometimes I just like to play around with a recipe. The man of the house is not overly fond of spiced cakes and biscuits so using the Sugar and Spice Cookies as the base point I made some quite delicious Cherry and Vanilla Biscuits. I needed to use quite a bit of vanilla extract to get a good vanilla flavour. Continuing my love affair with the biscuit forcer to press out pretty little flower shapes enhanced with the cherry in the middle. Some were joined together with white chocolate and vanilla filling.


Cherry and Vanilla Biscuits
125 g butter
1 1/2 cup caster sugar
2 eggs


½ teaspoon bicarb soda
1 tablespoon vanilla essence
3 cups flour

Glace cherries to decorate

These biscuits are very easily made in a food processor. Place all ingredients together, pulse and then blitz until the dough forms a ball

Method
Set oven at 170C. Lightly grease oven tray or spray with cooking spray.

Cream the butter and the sugar together.

Add eggs, vanilla, bicarb soda and mix well

Stir in flour Mix well

Press out biscuits using a biscuit forcer onto a tray or roll into medium sized balls and flattening onto the oven tray.

Press a quarter or half cherry into the centre of each biscuit.

Bake at 170C for 15-20minutes, until a light brown colour.


Use vanilla cream filling to make filled biscuits. Put cherries on half the biscuits before baking and pair with a biscuit that does not have a cherry











Vanilla Cream Filling
100 g white chocolate
2 tablespoons butter

1 tablespoon vanilla extract


Method
Melt chocolate and butter together, add vanilla to chocolate mixture. Mix well.
