Grey skies and rain the next, perfect for anything indoors;
like baking a delicious quince cake topped with cream cheese frosting and poached quince slices to have for dessert
and listening to music whilst you cook. This is a lovely version of What a Difference a Day Makes by the late Amy Winehouse.
Quince Cake
Cake
1 1/2 cups grated quince (2 large, peeled and cored))
1 cup grapeseed oil
2 eggs
1/2 cup brown sugar
1/2 cup walnut pieces
1 – 1 ¼ cups plain flour
1 teaspoons bicarbonate of soda
2 teaspoon cinnamon
2 teaspoons nutmeg

Cream Cheese Frosting
125 g cream cheese
90 g soft butter
2 cups icing sugar
finely grated rind /zest of 1 lemon j
1 tablespoon lemon juiceuice
To Decorate
Poached quince slices or chopped walnuts

Grease and line the bottom of a springform tin.
Place oil, eggs, sugar, grated quince in a large bowl. I use an electric hand beater on low to mix
them.
Add 1 cup of the flour, bicarb soda, walnuts and spices and
mix, making sure that it is well mixed. Add the extra flour if it seems a bit
too wet.
Pour into the greased and lined tin. Bake 150 Deg C until a
skewer tests clean, approx an hour and a half.
When cooked remove from oven and allow to cool in tin for at
least half an hour.
Once completely cold, spread with cream cheese frosting and
decorate with finely sliced poached quince or chopped walnuts.
Refrigerate.
To Make Frosting
Combine all ingredients in a bowl and beat until smooth and
fluffy.
