Sugar and Spice Cookies

The request was for a big jar of biscuits for a 'Biggest Morning Tea'. This mixture makes a lot of biscuits and is perfect for such events.


I was part way through making them when the man of the house asked what sort of biscuits I was making, Sugar and spice and all things nice says I. Quick as flash he came back with 'where's the chocolate - if it's all things nice there would be chocolate'.


This led to a delightful variation. The mixture was put through a biscuit forcer, a little sugar sprinkled on top of the bicuits and sandwiched together with chocolate ganache.

Sugar and Spice Cookies
125 g butter
1 cup caster sugar
½ cup brown sugar
2 eggs 
½ teaspoon bicarb soda
2 teaspoons vanilla essence
1 tablespoon water 

3 cups flour
2 teaspoons cinnamon

coffee sugar crystals to decorate



These biscuits are very easily made in a food processor. 

Method
Pre heat oven at 170C. Lightly grease oven trays, spray with cooking spray or cover base with baking paper.

Cream the butter and the sugars together.

Add eggs, vanilla, bicarb soda and water and mix well

Stir in flour and cinnamon. Mix well

Roll into medium sized balls.

Dip each biscuit in the coffee sugar crystals, flattening at the same time. Place on an oven tray.

Bake at 170C for 15-20minutes, until light brown colour.
