Quick Mix Fruit &
Nut Loaf
500g sultanas and raisins or use mixed dried fruit
¾ cup sherry /beer/ apple juice
125 g butter
¾ cup honey

2 eggs
1 ¾ cups SR Flour
Optional
½ cup walnut pieces
½ tsp mixed spice

Method 1
Soak the fruit in sherry overnight.
Melt butter and honey together, add fruit and mix well.
Stir in eggs flour and spice/nuts if using.
Spoon the mixture into a greased and lined loaf tin.
Bake at 160 deg C until golden brown and tests clean with a
skewer, approximately an hour.
Method 2
Melt butter, honey, fruit and sherry together in a saucepan on
low heat. Allow to cool
Stir in eggs, flour and spice/nuts if using.
Spoon the mixture into a greased and lined loaf tin.

skewer, approximately an hour.
