Quick Mix Fruit & Nut Loaf

Another cake recipe that uses honey and the sugar present in the dried fruit for sweetness. If I remember to soak the fruit I make this cake using method 1; I like how the fruit plumps up when soaked overnight and if I have left it to the last minute I make it using method 2. Usually I make a double quantity and use a stubby of beer, it really adds to the flavour. Like most of the quick mix loaves and nut rolls, it is best served with butter especially if it has been baked for a day or two.



Quick Mix Fruit & Nut Loaf
500g sultanas and raisins or use mixed dried fruit
¾ cup sherry /beer/ apple juice
125 g butter
¾ cup honey

2 eggs
1 ¾ cups SR Flour

Optional
½ cup walnut pieces
½ tsp mixed spice

Method 1
Soak the fruit in sherry overnight.
Melt butter and honey together, add fruit and mix well.
Stir in eggs flour and spice/nuts if using.
Spoon the mixture into a greased and lined loaf tin.
Bake at 160 deg C until golden brown and tests clean with a skewer, approximately an hour.

Method 2
Melt butter, honey, fruit and sherry together in a saucepan on low heat. Allow to cool
Stir in eggs, flour and spice/nuts if using.
Spoon the mixture into a greased and lined loaf tin.
Bake at 160 deg C until golden brown and tests clean with a skewer, approximately an hour.
