Chin Chin and Me 3

Continuing to work my way through the Chin Chin cookbook. Dinner tonight - The Sunday Roast page 192


Chicken stuffed with lemon wedges, garlic cloves, lemongrass and a squirt of Sriracha sauce, slow roasted and served with more Sriracha sauce, lime wedges and a sauce made with the roast juices, stock and thickened with a little arrowroot.


Accompanied by a big bowl of roast potato, sweet potato, pumpkin, red onion and steamed Brussels sprouts, green beans and broccolini.
